Ah, insomnia, my old friend, I see you're here for another visit. Come on in--I know you will whether I invite you or not, so we may as well make ourselves comfortable, right?

Tonight I looked into the refrigerator and saw a mess of ingredients that led perfectly to a New Mexico classic--the huevos y carne tostada con queso. It was so good, I thought I'd share my recipe.

All I did was fry up a corn tortilla (you can also use flour tortillas), then stir fry onion and leftover steak and then finally fry one egg to put on top--then I layered it on the flat fried tortilla with grated cheddar cheese. It's also amazing with tomatoes (at which point it almost becomes huevos rancheros--which I've been craving lately) or enchilada sauce.

In fact, if you fry a corn tortilla and have any type of meat and onion (and/or peppers, chile, tomato, beans, etc.) and cheese, you basically can make a delicious and somewhat authentic new mexican dinner! It's all variations on the theme, after all--though I like to think I make it "right," being a native, as it were. :) It was yummy.

Anyhoo, that's what's up here. The cat is asleep (I'm jealous) and hopefully I'll get to sleep soon too.

Ooh, and exciting news--Tifi and his lovely wife have had their baby! She is beautiful and precious and her name is Emma--and both she and her mommy are doing fine, I hear. I'm so very excited for them! I can't wait to see her and give Mr. and Mrs. Tifi a bug ol' hug. This is so exciting--all our old crew are all grown up and having babies! When we do the grand get-togethers now, Meg and Emma ca play together. :)

Sorry about the insomnia, but the huevos rancheros sounds really good.

I can't wait for Meggers to get together with Emma and play, either!

This is the first time I've been back to reading your blog since 8-12, my dear Friend. Life got a little crazy there (great, but crazy that is). :-) Good to be back! And YES, can't wait to introduce our little Em to all of you...and for Meg and Emma to play together! Thanks for including us in your 8-13 and 8-16 posts! How fun. :-) You're so sweet.
